WineMaker Notes: Crafted in Bordeaux style, intense notes of blackberry, cassis and bing cherries dominate the bouquet followed by layers of tobacco and toasted New French Oak. Bold plum and lush raspberries balanced with bright acidity and firm tannins entertain the palate and lead in to a long, lingering finish of vanilla and spice. While delicious straight out of the bottle, this wine develops beautifully with decanting which softens the tannins and ushers in subtle notes of brandied cherries and oiled leather. This elegant Cabernet Sauvignon will pair beautifully with charcuterie, aged cheeses, grilled meats and dark chocolate. Enjoy it now or let it develop in your cellar for years to come!
Terroir: Located at the corner of Atlas Peak and Oak Knoll on a soil type of alluvium fan which exhibits gravely deposits with low content of coarse fragment. Our Cabernet Sauvignon is planting with a vine density of 2074 per acre which is reflected by low yield of nearly three tons per acre or 40 hl per hectare and a higher concentration of flavor.
