FERMENTATION: The various components were fermented separately in upright stainless steel tanks where it was gently pumped over twice daily, increasing the extraction of aromas and textures.
AGING: 14 months in American, French, Eastern European neutral oak barrels and stainless steel tanks. Stainless steel helps to add fruit vibrancy to our Southern Hills Cabernet Sauvignon.
T A S T I N G N O T E S
Flavors of ripe black cherry and dark plum with undertones of coffee and spice. Rich, yet approachable tannins lead to a long, smooth finish.
